Authentic Latvian Bread Baked By Hand In New York's Finest Bakery.Known in Latvian as Saldskābmaize ("sweet and sour bread"), this loaf is more protein-rich and a bit sweeter than our Baltic Rye. We use less wholegrain rye in the Blonde, opting for more white rye flour. It is otherwise the same recipe of 100% rye flour, rye malt, and rye sourdough with a pinch of yeast. This rye is the closest to a classic "Deli rye" flavor, but unlike those wheaten loaves, this is dense and hearty sourdough bread will stay fresh and tasty for weeks.
