Yuxi Squash

A rare Chinese heirloom from Yunnan province, Yuxi is a flat, deeply ribbed squash with a tan rind. Inside, its deep-orange flesh is sweet and creamy, with a flavor like roasted chestnut crossed with butternut.
Sourced from traditional Amish farms in Lancaster County, Pennsylvania.
Roast it in wedges, steam it, or simmer it into soups and purées, and its dense, sweet flesh makes an outstanding pumpkin pie. It keeps for months on the counter.
