Nectarines

Peaches without the fuzz — grown in South Carolina, where hot days and warm nights build serious sweetness. Picked at the peak of their sugar. Honeyed and floral, with a clean tang at the pit. Firm and juicy on arrival, turning silky in a day or two — catch them where you like them. Eat cold over the sink. Slice over yogurt, or into a salad with basil and ricotta salata. Grill cut-side down until caramelized for pork chops or ice cream. Holds its shape in a galette.
Storage: Room temp until they give to a gentle press, then refrigerate. Use within a couple of days.
